I love the holidays. I look forward to Christmas time all year long. There’s something about cooler weather and being able to enjoy a hot beverage in my favorite red cup (you know the one I’m talking about) while snuggled in some boots and a scarf that make my heart sing. That and I feel like the holidays are the only time I can play hooky from my normal diet and enjoy some baking + holiday treats. So I was really excited when this amazing group of bloggers asked if I wanted to join in a little virtual holiday baking fun.
A couple weeks ago, my awesome friend Baby Boy Bakery shared this delicious looking moon pie recipe + I’ve been dying to try it ever since. I gave her a quick call for some quick and easy tips for making moon pies if I don’t have a moon pie baking sheet. Did you know that you can use a tablespoon of cake batter + a cupcake liner and create an adorable moon pie?! Holla!! Now you have no excuse to try this too! Plus, think about how much fun you’re kiddos would have helping you take those babies out of the cupcake liners! You’ll be a rock star mom for sure!
Here’s what you need:
– Box of chocolate cake mix
– 1 jar of Marshmallow Fluff
– Peppermint Extract
– Red + white sugar sprinkles
– Piping bag + tip
– Cupcake liners (if you don’t have a moon pie baking sheet
Now you’re reading to get started:
{STEP ONE} Mix up your chocolate cake mix in a bowl
{STEP TWO} Add cupcake liners to your cupcake pan
{STEP THREE} Using a tablespoon, add a little bit of cake batter to the bottom of the liner and spread it around so it creates a thin layer
{STEP FOUR} Bake at 325 degrees for 10 minutes and remove from oven. Let cool.
{STEP FIVE} Add peppermint extract to your Marshmallow Fluff and then using a piping bag add to one side of the moon pie.
{STEP SIX} Close your moon pie by adding the other side and dip into sprinkles to decorate your moon pie.
{STEP SEVEN} Serve ’em up to your friends!
