Happy February! Love is in the air and it is about to get real romantic with this recipe! You know me…I love my sugar. However, I do love me some chocolate too. Chocolate cookies are fantastic, but what is better? Chocolate Sugar Cookies!
These cookies are really great and you will end up with a moist sugar cookie with a rich hint of cocoa. Frost them with fudge (like I did), pipe royal icing or eat plain. Either way you’ll be pleased. Enjoy friends…Happy Valentines Day!
What You Need
`3 cups flour
`1/2 cup cocoa powder
`1 tsp baking powder
`1 cup salted butter (room temp)
`1 cup sugar
`1 large egg
`tsp vanilla
`1/4 cup whole milk
`extra flou, for rolling out dough
What You Do
`Cream the butter and sugar.
`Whip in the egg, vanilla and milk.
`Add the dry ingredients slowly; flour, cocoa powder, baking powder.
`Once the dough forms, chill for up to 2 hours.
`Once chilled, roll and use cookie cutters to create cookies.
`On a baking sheet lined with parchment paper, bake the cookies for about 8 minutes at 350 degrees.
`Cool them on a baking sheet. Once cooled, frost them and enjoy!

Do you think I could possibly swap out the whole milk for chocolate almond milk? Or coconut milk? I have a 2 year old with a severe lactose allergy. I should be able to use Smart Balance soy butter spread in lieu of butter….. but I’ve never actually baked with almond or coconut milk. My 2 year old isn’t a big cookie or sweets eater, but the ONE type he WILL eat…. chocolate sugar cookies. Never made them at home though. I would LOVE to try this recipe for him…. but given his issues with dairy, I’d have to try some substitutions. No joke, if he has one bite of milk or cheese or butter, he’s up all night screaming in pain. Poor kid doesn’t quite understand yet why he can’t have mac & cheese, & ice cream, & all the foods he loves so much, but everyone else can. He thinks mommy is just being mean by excluding him ): Poor lil guy. These cookies would cheer him up!!! Lol.
