One of our new favorite meals is a Chicken Tortilla Soup. Tonight I decided to take some pictures and do a quick tutorial for you.
What you need:
Chicken broth ( I use free range chicken broth from Trader Joes)
Chicken (you can uses shredded chicken or cut chicken squares
1 Onion
1 can of crushed tomatoes (or you can cut fresh tomatoes)
garlic
corn
peppers (if you prefer, I don’t)
oil
salt
pepper
ground cummin
shredded cheese
sour cream
flour tortillas
Let’s begin!
Grab a pot and heat up a tablespoon of oil on the stove. Once hot add chopped onion.
Let onions sizzle on a medium heat, then add corn to your pot.
Once your corn has had time to cook, add the crushed tomatoes
then your chopped or shredded chicken
I usually let this sit for about 3-5 minutes stirring frequently so that all ingredients can heat up nicely. As I stir I add salt, pepper, and ground cummin to taste.
Next add the chicken broth
While my soup is heating up I take a separate pan and fill it with oil. I chop up some flour tortillas into small strips and add it to the oil once it’s hot.
Leave them in there until they look like this
then take them out and pat them down with paper towels
Ready to eat?! Pour your soup into a bowl, add graded cheese, sour cream and some tortilla strips and enjoy!
